Beans are an excellent way to consume several important nutrients to treat different diseases including colorectal cancer, heart diseases and even diabetes. Moreover, you can consume beans to treat various other health issues that are commonly faced in your daily life. Beans are equally nutritious for people of all ages to consume.

As far as treating your taste buds are concerned, beans are scrumptious and crunchy. They are prepared easily without hassle. You can use them to prepare salads, dishes , or even eat raw. Boiled beans are even more nutritious. They come in different varieties and are not expensive to purchase as well. What more reasons do you need to consume beans?

Texas Pinto Beans

INGREDIENTS:

1(16 ounce) package dried pinto beans.

1/2 cups water.

2 cloves garlic, minced.

2 bacon, slices cut into 1 inches pieces.

1 teaspoon salt.

1 medium tomato, diced and jalapeno peppers, seeded and chopped.

DIRECTIONS: 

1. Place beans in a Dutch oven; add water 2 inches above beans.

2. Bring to a Boil; boil 1 minute; cover; remove from heat and let stand 1 hour; drain.

3. Bring beans, 4 1/2 cups, water and next 4 ingredients to a boil in a Ducth oven.

4. Cover. reduce heat, and simmer, stirring ocassionally, 1 hour and 30 minutes or until tender.

5. Add tomateo and jalapeno pepper, and simmer mixture for 30 more minutes.

Roasted Sweet Potato

 &

 Black Bean Salad

 

 

 

 

 

INGREDIENTS:

tablespoons olive oil, divided

12-1 teaspoon cumin 

coarse salt and pepper

medium sweet potatoes, peeled and cut into 3/4-inch cubes (about 1 pound total)

1teaspoon red pepper flakes (optional)

tablespoons fresh lime juice (from 1 lime)

(14 1/2 ounce) can black beans, rinsed and drained

1medium red onion, finely chopped

12cup chopped fresh cilantro

PREPARATION:

Heat the oven to 475 degrees. Place sweet potatoes on a rimmed baking sheet; drizzle with 1 tablespoon oil. Season with cumin, red-pepper flakes (if using), salt, and pepper; toss to coat. 

Roast on lower rack, until tender, tossing once during cooking, 25 to 35 minutes.In a large bowl, whisk lime juice with remaining 2 tablespoons oil; season with salt and pepper. Add sweet potatoes, beans, onion, and cilantro; mix gently to combine.
